   Flavor Not Always Lost With Lite

If so, you probably don’t need to learn a thing about low-fat or “lite” cheeses. Set out a plate of triple cream Brillat Savarin or luxurious Italian Gorgonzola Dolce and you can enjoy a small nibble and move on to carrots or jicama or a slice of apple. We know your type. We admire you. But we are not you.

Some of us have proven track records of excess and for those people, who need to cut back and need help doing it, there’s an entire industry of cheese-making that is offering products that are less fatty and lower in sodium than their counterparts. One of these companies, Beemster, produces a product they call Beemster Lite. They sent me a package of the cheese, which ended up sparking a search for other reduced-fat cheeses that people could enjoy without disappointment.

Now, you won’t find these lite cheeses, including Beemster Lite, at Venissimo or Taste Artisan Cheese in San Diego. Gina Freize, owner of Venissimo, explained that she doesn’t carry reduced-fat cheeses.
