The story of Nu-Tek's development sheds light on the ways food makers are responding to consumers' health concerns, the challenges manufacturers face and the conflicted relationship consumers have with products billed as more healthful. While processed food sometimes is blamed for the nation's problem with obesity and other health ills, Nu-Tek's makers say the interest in their product shows an industry making efforts to improve Americans' diets. Nu-Tek's bakery industry distributor, Cain Foods Industries of Dallas, also is selling the product to manufacturers that are using it as an ingredient in baked goods available in supermarkets.

St. John’s Bakery is not-for-profit bakery that offers about two dozen positions – for which there is a waiting list – providing work experience and apprenticeships for those who are unemployed, new to the country, dealing with addiction, among other social issues. St. John’s Bakery sells their baked goods at 12 markets across the city, as well as to more than 45 wholesale customers.

Companion Launches Their 20th Anniversary Pretzel Croissant

Famed St. Louis bakery, Companion, celebrates their 20th anniversary by launching their limited edition Pretzel Croissant nationwide.  This new offering is the innovation of owner, Josh Allen, who created these by sending Companion’s all-butter French Croissants through their pretzel bath (giving the croissant the rich mahogany pretzel coloring and flavor) and topping them with crunchy bits of pearl sugar.

Stew Leonard’s bakery teams have introduced the Cro-Do, 162 layers of butter anddough deep fried to golden perfection.  Half croissant and half donut, and using a unique recipe, Stew’s Cro-Dos have gained legions of fans in the few short days that the World’s Largest Dairy Store has been making and selling them after a successful test-run during the last week in June 2013.
