Daniele Inc. has recently installed a state-of-the-art, innovative high-pressure pasteurization (HPP) machine that will ensure the safest quality of meats and extend the shelf life of the product. The 350-Liter HPP system from Avure Technologies utilizes extremely high water pressure (up to 87,000 pounds per square inch) to inactivate microorganisms and enzymes and destroy food pathogens. Since HPP doesn’t utilize heat, chemicals or preservatives, the flavor, texture, vitamins and nutritional characteristics of Daniele’s finely cured Italian meats are left untouched.
