Cheese And Yogurt, Fresh From The Sheep

Sheep’s milk cheese is less well known in the United States than cheeses made with cow’s or goat’s milk, but a handful of farms are working to change that with some wonderful products. One of the best is in Columbia County: Old Chatham Sheepherding Company.

Old Chatham, whose cheese and yogurt are for sale at Whole Foods and specialty retailers like Plum Plums in Pound Ridge and through the company’s own Web site, produces an extraordinarily creamy, nutty and slightly sweet Hudson Valley Camembert.

Its blue cheese, with deep veins, is intense in taste and beautiful to look at.

There’s also a rich ricotta and four flavors of smooth, pleasantly sour yogurt: ginger, maple, blueberry and plain (six-ounce yogurt containers are $2.19 to $2.59 each at retail or $25 to $30 for a case of 12 online; the cheeses run about $20 to $24 a pound).
