Forever Cheese Debuts Pane di Musica Flatbread Crackers from Sardinia

Long Island City, NY – Forever Cheese, importer of unique cheese and specialty foods from the Mediterranean, is back with their new Pane di Musica, thin and crispy flatbread crackers from Sardinia, Italy. They are so named because their shape and texture evoke sheets of parchment used for notating music. The handmade feather-light crackers are made with semolina flour and finished with salt and a drizzle of olive oil. Their golden color, toasted flavor, and alluring crispy texture will make your senses sing.

This style of flatbread, known as pane guttiau, is deeply rooted in Sardinian culinary tradition. Since ancient times, shepherds traveled throughout the island with their flocks of sheep for months at a time. They favored flatbread for its hardiness and long shelf life, not to mention its delicate flavor. Even today, pane guttiau is an important staple that is found on tables throughout Sardinia. “We specialize in the most exquisite, essential products from Italy and beyond,” explains Michele Buster, co-owner and head treasure hunter for Forever Cheese. “I first found Pane di Musica around four years ago on a trip to Sardegna. After buying a few boxes and loving them, I encountered them later at a trade show and made contact. The traditional process of making Pane di Musica has remained largely unchanged. Semolina dough is rolled into a paper-thin layer that becomes incredibly crispy as it bakes. The aroma of freshly baked bread and toasted flavor are enhanced by a drizzle of olive oil and a sprinkle of salt. This delicate flavor is an ideal companion with cheese, charcuterie, and olives. In addition to numerous savory applications, they also work surprisingly well in sweet dishes, with layers of hazelnut cream and whipped cream sandwiched between the crackers.

Pane di Musica is the newest addition to Forever Cheese’s line of Mitica® crackers from Italy.
