LaClare Farms To Unveil Cave Aged Chandoka At March Farm Dinner

PIPE, Wis. – LaClare Farms will unveil a new cheese at the farmstead creamery’s monthly “Meet the Producer Dinner” on March 12.
Cave Aged Chandoka, a mixed-milk Cheddar made at LaClare Farms, will be featured with Fox River Brewing craft beers at the farm’s monthly dinner. The cheese is the result of a unique partnership between LaClare Farms and Standard Market of Chicago. The cloth bound cheddar is aged in Standard Market’s cheese aging cave for more than 10 months.
The evening begins at 5:30 p.m. with a cheese and beer reception and a behind the scenes tour of the facility. The dinner part of a monthly dinner series hosted at LaClare Farms. On the second Thursday of each month, diners are invited to “Meet the Producer Dinner”, featuring a multi-course meal using locally sourced ingredients prepared by the farm’s Chef Jim. Local foods are paired with a local brewery or winemaker, with representatives from featured producers attending to answer questions and mingle with guests.
LaClare Farms is a state-of-the-art cheesemaking facility featuring a retail store and café, as well as a milking parlor with viewing room where visitors may view daily milking of dairy goats. Owned by Larry and Clara Hedrich and their family, the farmstead dairy plant is home to Evalon, the 2011 U.S. Champion Cheese, 2015 Best of Class Hard Goat Cheese and Top 16 in the World Cheese Championship. Most recently, the farm earned a Good Food Award for Martone, a mixed milk cheese crafted by Champion Cheesemaker Katie (Hedrich) Fuhrmann.
The public is always invited to visit LaClare Farms from 10 a.m. to 7 p.m. and view 4:30 p.m. daily milking and cheesemaking operations. The facility’s café features a locally sourced menu for lunch and dinner, while the Retail Shoppe offers a variety of farmstead artisan cheeses, beer, wine and local products.
