Wisconsin company Great Midwest (www.greatmidwestcheese.com) makes a variety of flavored jack and cheddar cheeses. Morel and Leek Jack is one of the more seasonal, perfect for spring.
This mild cows’ milk cheese is soft and moist with a tang. It is strongly flavored with leek, onion and mushroom (a little real morel, mostly less expensive types), with pretty green and tan bits scattered throughout. If you like Cotswold, pub cheese or pepper jack, you’ll probably love it.
