Specialty Cheese Production Up In Wisconsin

MADISON, WI — The production of specialty cheese rose in Wisconsin in 2009, accounting for 18 percent of all cheese produced in the state.

According to the U.S. Department of Agriculture's National Agricultural Statistics Service, a total of 477 million pounds of specialty cheese was produced in 2009. That's 40 million more pounds than the state produced in 2008.

The Wisconsin State Journal reports that feta was the leading type of specialty cheese produced in the state, with 68 million pounds made. Hispanic cheeses, parmesan wheel and specialty provolone cheeses were also popular.

Of the state's 126 cheese plants, 92 produced at least one specialty cheese — that's up four from 2008.
