Don’t Forget Pork Tenderloins

One of the most overlooked meats available on the market today is pork
tenderloin. Pork tenderloin is the pork equivalent of beef tenderloin, but is
available at a fraction of the price. Pork tenderloin is not to be confused with
pork loin, which is entirely different.

Pork tenderloin is usually Cryovac packaged, and comes two to a package. The
meat itself is less than 2 inches in diameter, as opposed to pork loin, which is
generally about 4 inches in diameter. Because they are smaller in size, it is
better to cook the entire tenderloin whole, rather than portioning it before
cooking as is done with beef tenderloin.

Pork tenderloin is best complimented by an entirely different range of sauces
than the combinations that work well with beef.
