Roland’s Baking Company Becomes Rollin’ Dough Baking Company Under New Ownership

In the southwest corner of the Evergreen Village Shopping Center, you will find a large commercial bakery. Rollin’ Dough Baking Company (formerly Roland’s Baking Company) bakes breads, pastries and bagels for more than 35 locations in Mendocino County and surrounding areas. When asked for an estimate of the demand or volume involved with so many retailers, owner and baker Joanna Clemons gave an example, “We’re baking 500 burger buns and 600 bagels tomorrow; and we bake about 150 loaves a day.” Clemons and her husband John purchased the bakery in April 2018, and have tripled their wholesale customers in less than a year. “My stepfather Victor inspired me and was supportive of us when we first considering buying the bakery. He’s my biggest fan.”

Currently, it takes 10 employees to keep the bakery running, but according to Clemons, business picks up in the spring and summer. “We need 13 people to get through the busy season. All of our employees are Willits locals, and we’re so lucky to have good people. They’re our first priority, and they’re well taken care of. You can’t run a business without happy employees.” Orders for a single location can request 15 or more of 30 individual baked goods per week. With more than 300 items going to just one store, this bakery might create more than 20,000 delicious treats and staples in less than a month and they’re high quality.
