Fat-Free Milk: Fact Or Fiction?

Each year the range and sophistication of dairy products increases, and along with increased variety comes a choice of fat content in various products. Weight watchers can buy almost all dairy products in low-fat versions, from milk and dairy desserts to hard cheeses.

Fresh and long-life UHT milk products include many products with 1 percent or 3 percent fat and Tnuva also sells fresh milk that is fat-free.

Eitan Sharon, formerly the head technologist at the Tnuva dairy in Tel Aviv and currently the deputy director general of the Israel Laboratory Accreditation Authority, says consumer demand for low-fat dairy products was what prompted manufacturers to vary and expand their product lines. Even so, the most popular variety of fresh milk, according to the Supersol supermarket chain, is that produced by Tnuva with 3 percent fat content.
