Wisconsin's total cheese output was higher in November when compared to year ago levels, but fell slightly from the month earlier. The USDA reports that the state's dairy plants produced 217.1 million pounds of cheese during the month–which was up fractionally from last year, but down 3.2 percent compared to October 2010.
Nationally, 890 million pounds of cheese was produced–about six percent more than the same month in 2009, but was 0.3 percent less than October 2010 production totals. That often happens in November, because there were only 30 days to produce the product.
Wisconsin's production of American cheese decreased as the state produced 64.6 million pounds, about 5.6 percent less than last year, and 5.9 percent below last month's production. Cheddar output fell by 8.7 percent compared to 2009 to total 49 million pounds, and was 5.5 percent lower than the month earlier. Italian production was at 106.5 million pounds, up 4.1 percent above last year, and 0.3 percent more for the month. And Mozzarella cheese in Wisconsin totaled 73.4 million pounds–up 3.3 percent from November 2009, but was 0.1 percent lower than October 2010.
