Cheese Of The Week: Dubliner & Dubliner With Stout

Kerrygold is the brand name given to all dairy products produced by the Irish Dairy Board, a collective of small dairies all across Ireland that joined together in 1961. According to the Kerrygold website, all the products are made from all-natural, grass-fed cows’ milk from small Irish farms.

Kerrygold’s Dubliner cheese is a sharp, firm-crumbly cheese similar to a white cheddar, but softer, with a bit of the buttery sweetness of Parmigiano. It was introduced in 1996. It is manufactured by Carbery Dairy in County Cork and is sold internationally under the Kerrygold label.

Dubliner’s sharp character and slightly crystalline texture are a result of 12 months of aging.

Dubliner also is combined with Irish Stout in a blended cheese. The mature Dubliner is finely ground and mixed with the beer, then pressed into round wheels and coated in green wax for preservation. The texture becomes softer and more crumbly as a result of the process. The green rind also is quite pretty on the St. Patrick’s party table.
