New Calendar Celebrates American-Crafted Salami And Cured Meats

You say “salami,” but soon you’ll be singing about “salumi” with the introduction of the very first calendar devoted to U.S.-made cured meats.
The American Salumi Calendar 2011 celebrates a new generation of cured meat artisans who are changing the way we think about cold cuts the same way brewers transformed American beer, cheesemakers transformed American cheese and bakers upgraded the old squishy white loaf.

What is salumi? The calendar defines it this way:

“Salumi is an Italian term for preserved and cured meats, primarily pork and beef. Salami, made from ground meat, is one type of salumi; emulsified forms like mortadella are another. Some salumi are made from whole muscles — these include coppa, prosciutto, and guinciale.”

Each month is illustrated with beautiful photos that depict the history of salumi, the amazing diversity of salamis in the U.S., the magic that is prosciutto, a salami-making class, the art of the salumi sandwich-making and topping artisan wood-fired pizzas, salami around the world, heritage hogs, and a rare Q&A with American salumi pioneer, Armandino Batali.

In addition, one type of classic salumi is defined in detail monthly ranging from sopresatta in February to culatello in June and bresaola in October.

The calendar also boast the first-of-it’s-kind, full-color, pull-out, centerfold American Salumi mini-poster meant to be detached and proudly displayed in kitchens, delis, pizzerias and salumerias nationwide.
