Smoked Fish From Long Island

Phil Karlin, a commercial fisherman based in Cutchogue, N.Y., has started making and selling various smoked fish products under the name North Fork Smoked Fish. His line includes smoked blue fish fillets and a creamy smoked blue fish pâté, a slightly spicier Caribbean pâté made with smoked swordfish, a mixed smoked-fish dip, and hot-smoked Norwegian salmon pâté (below) and fillets, all tailor-made for easy entertaining. The pâtés and dips are appetite-whetters. The succulent fish fillets can be served alongside a salad, in a sandwich or broken up into a chowder.

North Fork Smoked Fish products are sold in the Union Square Greenmarket on Saturdays and Mondays; in the Abingdon Square market on Saturdays; at LifeThyme Natural Market, 410 Avenue of the Americas (Ninth Street); and online at northforksmokedfish.com. The pâtés and dip are $7.50 to $8 for eight ounces. Smoked blue fish fillets are $15 a pound, and smoked salmon fillets are $20 a pound. (The salmon fillets and pâté are not available at the Greenmarkets.)
