U.S. Farm-Raised Catfish Showcased As American Comfort Food

SAINT HELENA, Calif.–(BUSINESS WIRE)–The Catfish Institute (TCI) recently participated in the 12th Annual Worlds of Flavor Conference at the Culinary Institute of America, where top chefs, culinary writers and influencers gathered to explore two overlapping culinary trends street food and comfort food from around the world.

Conference participants discussed how Americans are defining which foods we eat through the culture of informal, casual food. TCI celebrity chef Cat Cora, of The Food Network Iron Chef fame, along with Taylor Ricketts and Nick Seaburgh of Viking Range Corporation, provided U.S. Farm-Raised Catfish tastings throughout the three-day event, held November 12th 14th, 2009.

The TCI booth offered dishes such as Fried Catfish on a Stick with Gribiche Tartar Sauce, Fried Catfish Poboys and Catfish Gumbo to the approximately 800 conference attendees, who were also able to learn about the sustainability, healthfulness and versatility of U.S. Farm-Raised Catfish.
