Culinary Institute Of America San Antonio Offering New Baking Degree

The Culinary Institute of America, San Antonio, 312 Pearl Parkway, has added an Associate in Applied Science (AAS) degree in baking and pastry arts to its curriculum.

Beginning Aug. 19, 20 students will start their studies in the new degree program, which is modeled after those of the CIA campuses in Hyde Park, N.Y. and St. Helena, Calif. The program focuses on baking and pastry techniques as well as bread, cake, pastry, dessert and confection production. Courses will cover topics such as Principles of Design; Baking Ingredients and Equipment Technology; and Nutrition.

The degree also will include leadership courses such as Introduction to Management; Menu Development; Introduction to Customer Service; and Controlling Costs & Purchasing Food.

The end of the program’s sophomore year will include experience in the CIA Bakery Café and Nao.
