Cupcake Customers Want More Variety, Baker Says

RIDGELAND, Miss. — Melisa Carstens opened Cakes & Candles in 2003, a time when many of her customers were content with rather ordinary cupcakes.

"Back then cupcakes were something you took to school for a homeroom party or served at a children's birthday party. They were usually chocolate cake or white cake," said Carstens, whose bakery is located in Trace Station shopping center on U.S. Highway 51 in Ridgeland.

That was long before Sex and the City's Carrie and Miranda devoured cupcakes outside a New York bakery and television shows such as Cupcake Wars, D.C. Cupcakes and Cake Boss enlarged consumers' expectations.

"They want more variety now," Carstens said.
