Fairhaven Organic Flour Mill Planning To Expand

What it is: The Fairhaven Organic Flour Mill creates hammer-milled or stone-ground whole-grain flours from certified organically grown grains.

"Our goal is to provide wholesome nutrition to customers," owner Kevin Christenson said. "We don't take anything out (of the flour), and don't add anything to it."

Most large flour mills will take things out of the grain such as the germ – which is the biggest source of nutrients – to create flour with a longer shelf life, he said. Customers have told Christenson that his flour feels heavier, and he said that's because "it's got everything in it."

Customer Leslie Mason said she's been buying the mill's whole-wheat flour for six months to make her own bread. "The whole wheat has a nice, granular texture," Mason said. "You can taste the flavor of the wheat."
