Saratoga Cheese Corp. Moving Ahead On Cheese Plant

AUBURN, NY – Saratoga Cheese Corp., the start-up company planning a $41 million cheese manufacturing plant at the industrial park in Aurelius, NY has made a 10 percent down payment and is moving forward with development plans, Stephen Lynch, director of the Cayuga County Department of Planning and Economic Development told county legislators Tuesday.

The company, previously approved as a regionally significant project by Auburn's Empire Zone has submitted paperwork for state certification as a qualified business enterprise. The next steps for Saratoga Cheese will be to submit a site and operation plan for approval to the Town of Aurelius, Lynch said.

And while Saratoga Cheese inches closer to sinking shovel into earth, the county Industrial Development Agency is also at work preparing the site for the cheese company, or any future project. Lynch said the IDA hoped to have the site prepared with roads, utilities and sewer access by summer.
