Alexian Brings Prepackaged, Single-Serve Chicken Ballotine To Consumers

NEPTUNE, N.J. – Alexian, known for its fine patés and terrines, is introducing a restaurant gourmet classic, Chicken Ballotine, in pre-wrapped, 5-oz. slices available at retail locations across the U.S.

French in origin, a ballotine is traditionally a boned thigh part of the chicken, duck or other poultry stuffed with ground poultry meat and other ingredients designed to enhance its flavor. Traditional ballotines are tied to hold their shape.

Alexian Chicken Ballotine is prepared with a golden breast of chicken that encases minced white chicken meat, pistachios and a medley of dried fruits such as papaya, pineapple, raisins and apricots. The prepared meat is then baked slowly in a terrine to maintain the shape of a paté.

The poultry used in Alexian's Chicken Ballotine is from a regional Pennsylvania ranch, chosen for its wholesome products that are free of hormones and antibiotics. The farm is a selected vendor that certifies its breeding and raising practices are humane and sensitive to the good health and wellbeing of its animals.
