Cheese Of The Week: Passendale

Passendale is a lovely Belgian pasteurized cow's milk cheese that is easy for everyone to love.

It originated in 1978 at a dairy owned by the Donck family, who had been making cheese since 1932. They called their new creation "de Groot Hof — Grand'Ferme."

When the cheese began to be exported in 1980, they changed the name to Passendale after the village where the dairy is located.

The uncut cheese looks like a large loaf of bread with a toasty, floury rind. On the inside, the soft, creamy paste is an ivory-yellow color, dotted with small holes.
