House Of Castello Expands As Part Of Master Brand Strategy

A new initiative from a multi-award winner producer is bringing consumers a recognizable standard of imported quality and variety. The House of Castello® is adding Havarti and Alps Selection Cheeses to its line of imported Danish Blue Cheeses.

A New Name & A New Variety

Imported Havarti Cheeses, previously marketed under the name “Denmark’s Finest”, are being rebranded as Castello®, with innovative new packaging. Regular varieties include Creamy, Dill, Jalapeno, Caraway, Herbs & Spices, Wild Garlic, and Light. Seasonal and artisanal varieties are in the works as well.

Castello® also introduces Reserve Aged Havarti, a Havarti adapted from a 130-year-old Danish recipe and aged for 9 months. As it ages, a special culture forms tiny, salty protein crystals, giving this cheese a stronger caramel flavor and crunchier texture than regular Havarti. Trade reaction to date has been overwhelmingly positive.

New Alps Selection

Castello® also acquired three distinctive “Alps Selection” varieties that will launch under the master brand this fall: Hirten, Bergkäse, and Weissbier. Made with cow’s milk on tiny, picturesque farms in the Alps, these unique cheeses are carefully handcrafted using generations-old recipes—they are small mountain cheeses with big tradition behind them.

Hirten has a deep orange color, a crumbly texture, and a complex taste with hints of caramel and pine. Bergkäse, which has Protected Geographical Origin status, is coated with mountain herbs and spices during ripening, imparting a smoky aroma and a spicy taste with hints of hay. Weissbier is wiped with Bavarian Weissbier from a local brewery 2-3 times per week during ripening. A soft cheese with hoppy bitterness and nuttiness, it is perfect with a glass of beer or white wine.

Castello® will support the launch of Alps Selection cheeses with a series of promotional events and tastings in the New York area this fall.
