Kicking off one of the biggest food projects at Publix for the next several years, the grocer this week will start vastly expanding its lineup of gourmet cheeses and start replicating the kind of "cheese experience" found at their gourmet Greenwise stores at even the smallest of the company's 1,000-plus locations.
