Quark, A Versatile Cheese, Can Pair With Sweet Or Savory

We're Wisconsinites – cheese runs through our veins. We pride ourselves on knowing where to get the best cheddar, which varieties make the gooiest grilled cheese, and the best methods for deep-frying cheese curds. In fact, we like our cheese so much that some of us wear it proudly on our heads.

But when it comes to quark cheese, Germans and Central Europeans have us beat.

Originating in Germany, quark is a fresh, soft cheese that tastes like a mix of cream cheese, cottage cheese and sour cream. "Since it's very mild, it takes on the flavors of the other ingredients you use it with," said Heather Porter Engwall, director of national product communications with the Wisconsin Milk Marketing Board.

According to her, the average German eats between 10 and 20 pounds of quark per year.
