Transatlantic Foods Expands Artisanal Charcuterie Line

Transatlantic Foods has introduced a half dozen new items to its Artisanal Charcuterie Line. All as pure as the rest – no antibiotics or hormones, no nitrates, animals humanely raised and vegetarian-fed, all-natural right down to the casings and hemp string, shelf stable, and no artificial additives, ever.

Genoa is a crowd pleaser. Unlike industrial salamis, it is made with finely ground, 100% pure pork. Hints of coriander and pepper round out Genoa’s mild flavor. Large, supple slices make it ideal for sandwiches.

Pepperoni dials down the usual heat in favor of rich flavor. A spot of cayenne produces a deep red color. It is made of 100% pure pork, with notes of sweet anise. The obvious choice for pizza, it is generously-sized.

Guanciale is affectionately known as sweet cheeks. Pork jowl is similar to pancetta, a little fattier, and sweeter. Its cure spices, juniper berry and bay leaf, bring an edgey twist to traditional recipes. Cook the guanciale in traditional recipes like pasta all’amatriciana.
