Bridging The GAP Chicago Culinary Leaders Learn About Pork

The growing disconnect between city dwellers and farmers regarding the role of pork production in the nation's food supply has prompted Belstra Milling to find innovative ways to reach out to urban consumers, from the ChicaGourmets to the Culinary Historians of Chicago to the Washburne Culinary Institute in the Chicago area.

"We're having a delightful time with these folks," said Jon Hoek, director of animal husbandry at Belstra Milling, a family-owned, independent feed manufacturing company in DeMotte, Ind.

Hoek, who oversees Belstra's hog operations, and his colleagues strive to find new ways to educate urban audiences, from "Day-on-the- Farm" videos on YouTube to guest lectures and farm visits. Their efforts are helping spread the industry's We Care message.
