In many kitchens, the star of the menu during the holidays is a big beef roast. But a growing trend in beef marketing can make it difficult to tell what grade of beef you're actually getting.

Talk to any butcher and they'll tell you – there are a number of factors that determine beef quality. But the universal standards in the United States are the beef grades established by the U.S. Department of Agriculture to help consumers know more about what their getting.

• USDA Prime, the most tender, fat-marbled and superior grade is also the most expensive.

• USDA Choice is a step down from prime and more affordable, with moderate marbling – still tender and juicy.
