FSIS Issues Directive About Safe & Suitable Ingredients

The Food Safety and Inspection Service (FSIS) issued FSIS Directive 7120.1, Revision 3: Safe and Suitable Ingredients Used in the Production of Meat, Poultry and Egg Products.

The directive, which replaces FSIS Directive 7120.1, provides inspection program personnel (IPP) with an up-to-date list of substances that may be used in the production of meat, poultry and egg products.

FSIS will continue to update this directive quarterly by issuing revisions to this directive as opposed to issuing amendments to the directive.
