Michigan’s Bison Farmers See Big Future For Lean Meat

CLARE – Michigan farmers are getting in on a growing trend: raising bison.

Consumer demand is rising for meat from the bison, also known as buffalo, and Michigan bison farmers say they are selling more of the meat that they describe as leaner, sweeter and richer than beef.

"Between the media and the push to eat healthier, eat local, we've noticed our monthly sales going up," Krista Pohl, co-owner of Clare-based Pohl's Bison, told The Bay City Times for a story Thursday. "We notice a few more new faces and it's all word of mouth."

Bison are raised in every state – including Hawaii – with about 4,500 private ranches and farms nationwide, according to the National Bison Association.
