Trouble On The Range As Producers Struggle To Keep Up With Bison Demand

CALGARY — After years of trying to stoke a taste for bison, customers around the world are now salivating for the lean red meat raised mainly in North America.

But just as it's landing on more and more dinner plates – and with prices at an all-time high – those who sell the animals are struggling to keep up with the demand.

Older farmers and those looking to take advantage of good prices are selling off some of their herd instead of breeding, while fewer people are jumping into what is an expensive and long-term investment.
