Crawfish Out In Full Force

The Louisiana crawfish season kicked off in early January, but nobody bothered to tell the mudbug. Like the proverbial groundhog, the crawfish must have seen his shadow and sneaked back in the mud for six more weeks of winter.

In truth, unseasonably cold temperatures kept the shellfish tucked deep in the mud. Their metabolism slowed; their hunger stymied. The result was a fraction of the numbers usually seen in the first quarter of the year, small in size and poor quality.

Add to these already diminished numbers the unprecedented Super Bowl victory by the New Orleans Saints. Between playoff games, the Super Bowl and an earlier-than-usual Mardi Gras, Louisiana folks called dibs on any available crawfish.
