Gonnella Baking Lays Off 40 Workers as it Stops Fresh Bread Deliveries and Transitions Into Frozen Dough

Gonnella Baking is laying off 40 workers as it shutters its fresh bread operation and completes its transition into the frozen dough market.

The Schaumburg-based bread-maker, which was founded in Chicago in 1886 and employs roughly 700 workers, delivered fresh baked bread to other bakeries and suppliers. But the company is increasingly focusing on its frozen bakery products, said Tom Marcucci, vice president of sales and marketing.

Gonnella has two frozen dough facilities in Schaumburg and another in Hazle Township, Pennsylvania. The company also operates a baking facility in Aurora.
