Trendy Demonstrations At All Things Baking

Slidell, LA – All Things Baking will be September 9-11, 2012 at the George R. Brown Convention Center in Houston, Texas. Attendees can expect a high-energy, innovative trade event geared to appeal to today’s forward-thinking bakers and food service professionals.

The Retail Bakers of America is proud to provide opportunities to meet face-to-face with exhibitors, attend hands-on educational sessions and watch demonstrations on the show floor. Through the demonstrations and interactive sessions, bakers can gather creative ideas and learn practical tips from the experts that can be applied immediately to enhance and improve their own retail offerings.

On Sunday, September 9 at 10:30am, come see the very talented baker Chef Dominique Homo. Chef Homo, with the California Raisin Marketing Board, will present the “Legumes and Integral Wheat Flour Tiger Bread” demonstration. This very trendy tiger bread is prepared from a blend of integral wheat flour and a variety of grains like quinoa, wild rice and millet and legumes such as lentils, yellow and green split peas. The California raisins add a touch of sweetness which is perfect for a healthy breakfast or snack bread. Tiger breads are easy to recognize since they appear with a nice cracked aspect. This bread features a light curry topping.

Chef Homo has served as a coach for TEAM USA in the Coupe Du Monde competition in Paris. He worked for LeSaffre for more than 15 years as a trouble shooter when a baking factory had any issues with their yeast application or were seeking new types of yeast with which to experiment. When The Bread Bakers Guild of America holds their Camp Bread teaching sessions, Chef Homo is called upon to teach sour dough baking. He is also a judge for the California Raisin industry in their annual America’s Best Raisin Bread Contest in the artisan and student categories. Currently Chef Homo has a very popular home baking school in Montreal and is a frequent guest there on TV and radio shows.
