Aged Sheep’s Milk Ombra: A ‘Ros’ By Another Name

If you are looking for the finest cheeses Spain has to offer, Catalonia is the
place to go. That’s the opinion, at least, of Michele Buster, whose import
company, Forever Cheese, brings in many gems from Spain and Italy.

“From the breadth and depth of what I’ve tasted in Catalonia, I think they’re
the leaders,” says Buster.

We can certainly thank Catalonia for Ombra, an aged sheep’s milk wheel that I
just encountered for the first time, although Buster says she has been importing
it for a couple of years. If you like Manchego, Roncal and Zamorano, the Spanish
ambassadors for aged sheep’s milk cheese, you should taste this more artisanal
sibling.
