White Cheddar and Orange-Fig Filo Triangles

1 package frozen filo dough (found in the grocery store freezer)
1/4 cup butter, melted
1 jar orange-fig spread (such as Dalmatia)
6 rounds of Mini Babybel White Cheddar cheeses, shredded

Preheat oven to 350ºF. Open filo dough and unroll it carefully (it's very fragile). Keep the sheets covered with a piece of plastic wrap until ready for use.

Place one sheet down on your work area and paint with melted butter using a pastry brush, taking care not to tear it too much. Place another sheet of filo right on top of the first. Using a pizza cutter or a large knife, cut the dough crosswise (the short way) in to 6 strips. At the base of each strip, place a 1/2 teaspoon dollop of fig spread and a pinch of shredded cheese. Then, fold the bottom corner of each edge up to meet the opposite side of the edge and continue, American flag style, until the strip is folded into a triangle.

Place the six triangles on a cookie sheet. Continue until all filo dough has been used. Then, paint all the triangles with the remaining melted butter and bake until golden, about 10 minutes. Don't worry if some of the filling leaks out, that's fig caramel.
