'A Cheese Named Sue' From Haystack Mountain Goat Dairy

A Cheese Named Sue is a semi-hard 6oz washed-rind cheese made from raw goat milk produced in collaboration with Oskar Blues.

The cheese is funky, meaty and complex with notes of dried flowers and buttered toast. As it ages for at least 60 days the cheese is washed in Oskar Blues G’Knight Imperial Red IPA, which imparts a deep orange hue and hoppy aroma.

In 2014 Sue was awarded First Place in the American Originals category for goat milk cheeses at the American Cheese Society conference.
