Cheese Of The Week: Abergavenny Black Mountain

The British are the original masters of cheddar cheeses, and they love it in all forms. A friend of mine from London explained to me that every pub in England offers a "ploughman's lunch," or a plate of buttered bread, pickles, salad, and a big wedge of cheese — usually some type of cheddar. They melt it over the famous Welsh Rarebit, cook it into cheese and ale soup, and these days they have a penchant for grinding it up, adding stuff to it, and pressing it back into a wheel form.

These "blended" cheeses are not processed flavored cheeses. They are made of real, mature cheese, with no extra binders, preservatives, or anything else; just the cheese and mix-ins, pressed back into the wheel shape and ready to go.

Abergavenny Fine Foods, located in Abergavenny, Wales, makes a series of four delicious blended cheddars which are distributed to the United States by Somerdale exports and carry the Somerdale brand name.
