New Haven Cheese Truck Delivers

Since opening a few years ago, the New Haven bistro Caseus (Latin for "cheese") gained a following for its gourmet versions of cheeseburgers, mac and cheese, and onion soup gratin, not to mention more unusual creations such as peach-and-chevre ravioli. Now its beloved grilled cheese sandwich is a little easier to come by. Caseus rolled out its Cheese Truck last spring, making a distinctive addition to New Haven's already vibrant food truck scene.

The vibe: Like any other food truck, it's casual as can be. The staff is cheerful and efficient, though sometimes the lines grow long. You order and pay, then wait for your name to be called. On a beautiful day, the wait outside is part of the charm. In the rain, gloat that fewer people stand between you and your lunch. Food comes in containers that are easy to carry elsewhere, but for food this fresh, eat it while it's hot.

The food: The starting point is the Connecticut Classic grilled cheese ($5), featuring a signature blend of six shredded cheeses on generous slices of rustic bread. On bread grilled to a crisp golden brown, the melted medley of provolone, Swiss, comte, gruyère, gouda and sharp cheddar offers a rich, complex flavor.
