Yancey's Fancy Cheese Peppadew Melts Nicely

Yancey's Fancy cheese in Corfu, N.Y. ,was established in 1998, but grew out of the Kutter cheese factory, which had been in business since 1926.

Yancey's Fancy specializes in numerous styles of aged and raw cheddar cheese, along with edam, gouda, and a special triple-creme recipe called Bergenost.

The company is also well known for its flavored cheeses, which are blends of cheddar cheese combined with ingredients from bacon to roasted tomato to horseradish, and other ingredients. The flavored varieties can be found at numerous locations in the Evansville area, notably Buehler's Buy Low and The Fresh Market.

Up until now, I've frankly avoided these, because I'm not usually a fan of flavored cheese, and because the words "Pasteurized Processed" are planted square in the middle of the label.
