Demand For American Lamb Increasing

Again this year, the American Lamb Board invited fans of the meat to share their favorite family lamb recipes for a chance to win American lamb to serve a family of 10 for the holidays.

Traditionally, folks have celebrated the holidays over a honey-glazed ham or baked turkey, but in more recent times, the American Lamb Board has touted a leg-of-lamb or shoulder roast for those special times, said Margaret Magruder, a member of the Denver-based American Lamb Board.

"Lamb has become the meat of choice at culinary events and leading restaurants across the country and outperformed all other proteins," she said.

The holiday promotion is one of several campaigns initiated by the Lamb Board throughout the year. In October the FY 2012 Lamb Jam Tour kicked off in Seattle. The event featured 19 top chefs creating "lambtastic" dishes paired with more than 30 local Washington wines. Guests enjoyed a butchery demonstration and
