Christopher Ranch Introduces Hawaiian Purple Sweet Potatoes

Gilroy, CA (March 2011)—Christopher Ranch is proud to announce a new product straight from the Islands: Hawaiian Purple Sweet Potatoes. Christopher Ranch is already well established with farmers in Hawaii, handling over half a million pounds of fresh Hawaiian-grown ginger annually, so it was a natural fit to work with them on another Hawaiian crop.

Hawaiian Purple Sweet Potatoes are a member of the morning glory family and are called "uala" in Hawaiian. Also known as Okinawan potatoes, they are native to the Japanese island of Okinawa, and are believed to have been brought to Hawaii a couple of centuries ago when many Japanese were immigrating to the island.

The nutritious sweet potatoes are fat free and low in calories, high in fiber and loaded with antioxidants. A one cup serving of Hawaiian Purple Sweet Potatoes has only 115 calories, yet is packed with 4 grams of dietary fiber. The sweet potatoes are packed in 30 pound cartons.

The natural sweetness of Hawaiian Purple Sweet Potatoes makes them the perfect ingredient for all types of dishes. They are fantastic baked, boiled, fried, roasted or even microwaved, and are delicious used in entrees, side dishes or desserts. According to Chef Neil Murphy of Merriman’s Restaurant, Waimea, Hawaii, "My challenge in working with them was to limit myself…I could have easily made twenty or thirty dishes!"
