PATERSON — A new federal law, signed by President Obama last month, will require food producers to map the exact DNA makeup of whatever they manufacture and sell to grocery stores, so that regulators can better trace contaminated ingredients during a recall. That new mandate could mean an opportunity for a company in Riverdale.
The Food Safety Modernization Act requires the Food and Drug Administration to establish a product tracing system, which, in turn, could force food companies to better track the supply-chain movement of each ingredient used in every batch. Bakers in New Jersey, for example, will need to document which sack of salt they used to make the last round of semolina bread, and more important, which stores and restaurants received those loaves.
John Imparato, the owner of Gianella's Modern Baking Co., of Paterson, can better comply with those requirements — once enforced — because of a newly installed automated ingredient system in the back of his factory. The machine, called an "ingredient vibration system," allows Imparato to electronically monitor every measurement of every kaiser roll and to ensure that each batch of ingredients is produced uniformly, with as little waste as possible.
