KITCHENER – Richard Harris puts on a white lab coat and hair net and inspects the trays of cakes and cupcakes baked in the kitchen of his Kitchener bakery.
At one work station, an employee adorns dozens of cupcakes with icing and Belgian chocolate. Harris adjusts one piece of chocolate as it is slightly lopsided.
It’s that attention to detail and quality that Harris says sets his business, La Patisserie Fine Cakes & Pastries Inc., apart from other wholesale bakeries.
“Perfection it has to be because there are always others queuing up” to take away your customers, he says.
