So what exactly is brown cheese? It's quite unusual. Visitors to Norway often say that it tastes like a sweet-savoury, fudgey Caramac, which may sound unpromising. I'd rather describe it as a deeply savoury dulce de leche, and as such it can be a challenge to non-Norwegians. The sweetness comes from overcooking whey until a Maillard reaction kicks in and the milk sugars caramelise. Brown cheese doesn't go through any maturation process, and it keeps in the fridge for a few months.

Point Reyes Farmstead Cheese Company's 'Bay Blue' Wins Good Food Award

Bay Blue, the newest cheese from Point Reyes Farmstead Cheese Company of Marin County, CA was named a Good Food Award Winner in the Cheese Category at last night’s Award Ceremony.  Held at the historic San Francisco Ferry Building and hosted by Alice Waters, 11 cheeses were given the top award of Winner.   It was announced at the ceremony that Bay Blue garnered the Judges’ top score, which earned the company the honor of giving the acceptance speech on behalf of all cheese makers in the category.
