Wisconsin Butter Makers Churn Out Artisan Products

MADISON, Wis. Artisan butter continues to grow in popularity with chefs and retailers as consumers increasingly look for new options. Wisconsin’s butter makers are leading the way with new products and flavors. These include:

Hand-Rolled Butter – Available from Farmhouse Kitchens, Rochdale Farms and Alcam Creamery, these rustic, paper-wrapped rolls of butter are made with whey cream and rolled by hand. They have a slightly tangy flavor and light, airy texture.

Seasonal Butter – Summer Butter and Harvest Butter from Nordic Creamery highlight the seasonal differences in the milk. The company also makes Cultured Butter with Sea Salt and a variety of seasonal flavors, including Cinnamon-Sugar and Garlic and Basil.

Pasture Butter – This cultured and lightly salted butter from Organic Valley is produced in small batches at the height of pasture season, providing higher levels of antioxidants, CLA (conjugated linoleic acid), and Omega-3 and-6 fatty acids.

European-Style Butter – Offered by Grassland Dairy, this rich, flavorful butter contains 83 percent butterfat and is great for baking, sauces and confectionary treats.

Flavored ButterCreekside Creamery starts with Grassland butter and adds sweet and savory flavors such as Cinnamon Honey, Strawberry, Garden Herb and Roasted Garlic.

Spotted in-store: Hy-Vee offers compound butters in a variety of seasonal flavors created by its in-house chef. Serving suggestions help customers put them to use.
