Just Released: Acorn Tamworth Meats From La Quercia

The most flavorful pork comes from pigs that have had a rich and varied diet—especially when it includes an estimated 65% acorns! Tamworth pigs are known for their succulent meat and sweet nutty flavor— the forest foraging diet adds a spectacular richness and a creamy texture that will knock your socks off.

These heritage breed Tamworth hogs are pasture raised in Missouri at the family farm of  Russ Kremer and spend their last four months foraging an Ozark Mountain hillside covered with oak and hickory trees. It is the ideal environment for raising happy, healthy, delicious hogs.
 
Acorn Spallacia (pronounced spah-LAH-chahh): dry cured pork shoulder. Very similar to prosciutto in eating experience and manner of curing. Sold by the whole shoulder, 4-9 lbs. Skin on, shoulder blade removed. Easy to slice by hand or electric slicer.

Acorn Coppa: dry cured collar rubbed with spices. Sold whole, 1-2 lbs each. Boneless and skinless. Amazing melt-in-your mouth texture.

Acorn Lonza: dry cured loin rubbed with spices. Sold whole, 2-3 lbs each. Boneless and skinless. Delicate and tender.

Acorn Guanciale: dry cured pork jowl rubbed with spices. Sold whole, 2-3 lbs each. Adds a silky quality to any dish.

Acorn Borsellino Salami: a tasty little salami seasoned with coriander, rosemary, and black pepper. Easy to cut and eat. Fantastic paired with cheese and wine. Limited availability.
