Maplebrook Offers New Size Of Burrata

BENNINGTON, VT – Maplebrook Fine Cheese is pleased to announce the introduction of a new size of their renowned burrata. Originally offered in eight ounce and four ounce sizes, Maplebrook has now released a unique two ounce size, also known as burratini. The two ounce burratini is packaged with four pieces in containers of sea salt brine.

The head of Maplebrook’s burrata team is Domenico Marchitelli, a native of Puglia, the Italian region where burrata originated. Marchitelli has now trained a team at Maplebrook, and cases of burrata leave the plant daily, seemingly minutes after being made.

The two ounce burrata was developed based on suggestions from chefs, who wanted to create dishes with a single, whole burrata ball. Maplebrook’s burrata team went to work, testing a variety of configurations that would ensure meeting Maplebrook’s standards for flavor, texture, aesthetics, and shelf life.

Maplebrook Fine Cheese began producing hand-stretched mozzarella in the kitchen of an Italian grocery in Manchester, Vermont in 2003. Michael Scheps, a third-generation cheesemaker, would scramble to keep up with the orders generated by his partner, Johann Englert. The following year, the pair saw enough potential to purchase a plant and launch a dedicated business. The Maplebrook brand continues to stand for authenticity, old-world methods, and pure ingredients.
