For Some Holiday Dinners, Beef Is Where It's At

Visions of a beef rib roast for Christmas dinner dance in the head of Martha Millhaem this time of year.

A bone-in, standing-rib roast was what her mother, an Air Force wife, prepared — wherever the family lived — on Christmas.

If Millhaem visits someone on the holiday and the menu doesn't include roast beef she finds herself thinking about making her own roast beef dinner.

"For me, it doesn't seem like the holiday if you don't have your own little thing because it ties us to wonderful memories," the Omahan said.

Others may associate Christmas dinner with roast turkey or goose, but Millhaem is not alone in her preference for a beef roast.
