Nova Scotia’s Halifax Marriott Now Serving Sustainable Seafood

HALIFAX, Nova Scotia, Nov. 5, 2010 — The Halifax Marriott Harbourfront Hotel is now serving sustainable seafood in the hotel restaurant – 44 North Ocean Bistro. This Nova Scotia hotel is committed to providing guests an environmentally-responsible and delicious menu, and their dedication has led them to partner with Ocean Wise, the Vancouver Aquarium's conservation program.

Seafood is considered sustainable when the process used to catch or farm a species guarantees the continued health and vitality for the group of fish and the marine ecosystem.

The criterion Ocean Wise and the downtown Halifax hotel use to determine if a species is sustainable include:

•The species is found in abundance and is resilient to fishing pressures
•The fishing plan is well-managed and dictated by current research
•The harvesting process avoids catching unwanted and endangered species
•The harvesting process does not harm marine or aquatic habitats or other species

Trevor Simms, the executive chef of 44 North Ocean Bistro, has launched his winter menu that celebrates the new partnership. The menu includes dishes such as roasted Sockeye salmon, Sockeye salmon salad with Thai lemon drizzle and seared black cod with saffron chive risotto. The menu launched on October 16 and will run until spring.
